Vegetarian Roasted Pepper Mozzerella Cheese Panini

Try out our simple and gooey vegetarian sandwich for your next lunch. It’s an easy way to get more veggies in your diet and stay fit. Add any kind of veggies—from tomatoes to avocados. Can’t go without meat? Just add some bacon or Prosciutto if you're feeling it.

 

Ingredients 

  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoon balsamic vinegar
  • 1/8 teaspoon black pepper
  • Vegetable oil cooking spray
  • 4 slices fresh mozzarella (or whatever cheese you like)
  • 4 large pieces of PRZ Roasted Peppers
  • 1 baguette, sliced in half. Or ciabatta bread.

 

Directions

1. Follow Directions for PRZ Roasted Peppers. Slice mozzarella.

 

2. Whisk vinegar, oil, salt and pepper in a bowl.

 

3. Build sandwich by piling peppers and cheese on the bread. Drizzle with dressing. Close sandwiches; spray both sides with cooking spray.

 

4. Heat a medium nonstick skillet over medium-high heat (or a grill pan if you have one); add sandwiches. Place a second skillet on top of sandwiches and press down. Cook 4 minutes, flipping once. This will sandwich will also work with a Panini Press or your George Foreman grill if you have one. Cut in half and serve alongside a fresh salad.
