Spinach with Anchovies and Pine Nuts

This makes a great side dish to get those greens in your diet. To get your protein on, serve it with a grilled steak or chicken breast. If you prefer something veggie, toss this with some linguini for a man-sized meal.


PRZ TIP: This recipe also works well with green beans or broccoli.




  • 1/3 cup black currants
  • ½ cup olive oil
  • 4 anchovy filets (chopped)
  • 3 tbsp fresh parsley
  • 1 garlic clove (finely chopped)
  • 2 lbs fresh spinach
  • ¼ cup of pine nuts




1. Soak black currants in either warm water or white wine for 15 minutes.


2. Heat oil in a nonstick pan over medium heat.


3. Add the parsley, garlic, anchovies, currants, nuts, and sauté for 2 minutes.


4. Add the spinach and sauté very briefly.


5. Drain currants and add to dish.


6. Salt and pepper to taste (remember anchovies are salty).


7. The spinach should be barely wilted to avoid mushiness. Serve immediately.
