Roasted Vidalia Onions

This simple recipe will become an arsenal for so many of your dishes. I mix roasted onions with so many recipes. I don’t know of any way of cooking or cuisine from any part of the world that does not use some sort of onion.

I used to not eat onions growing up, once I figured out how delicious they can be and how they add another element to the over all taste, I became an addict.


  • 3 Vidalia or Simple Sweet Onions
  • 1 Table Spoon Olive Oil
  • 3 Table Spoons Herbs, Rosemary or Thyme
  • 1-teaspoon kosher salt
  • 1-teaspoon pepper


  1. Preheat the oven to 450 degrees.
  2. Sprinkle the onion with salt, pepper, rosemary or thyme.
  3. Place the onions either in a roasting pan or cover with foil.
  4. Roast for 25 minutes
  5. Reduce the temperature to 250 degrees and roast for another 40 minutes.


When your onions cool down, peel them, you can use them at that moment, I keep some in the fridge just to have around for other dishes I am cooking through out the week. If you refrigerate do not keep for more then 1 week.
