Roast Beef Sandwich

Making a sandwich is both an art and a skill. Every layer of your sandwich should be bursting with flavor. The key here is the avocado, which gives the sandwich additional flavor and nutrition. Oh yeah, and you can substitute the roast beef with turkey, ham or chicken.



  • 4 slices of rare roast beef from your local deli
  • 2 slices of bread (PRZ recommends Spelt)
  • 3 slices of tomato, preferably in season from the farmers market
  • 1 Slice of Provolone cheese
  • Mayo
  • Sliced pickle




1. Cut the avocado in half, using your knife to remove the seed. Using a spoon, scoop out everything inside the shell, and put into a bowl. Add a tiny bit of salt and pepper and start mashing the avocado in your bowl, pressing down with the back of the spoon and adding olive oil if moisture is needed.


2. Slice three thin slices off your tomato. Or if you want to get fancy with this, put your tomatoes in a bowl, pour in a drop of balsamic and olive oil and pepper and let the tomatoes soak in the bowl until you are ready to use them.


3. Preheat your broiler. When ready, add the bread once they are toasted on one side, put a slice of cheese on each piece, and put both pieces back in, so one has cheese melting. Once your cheese has melted and the bread has toasted, bring out the toast.


4. On top of your cheese spread the avocado, lay the tomatoes, on top, lay roast beef, put the pickles on, cut them so they fit proportionately, take the other bread and spread the side going down with mayo and put on as the last piece.


5. Put the finished sandwich on a cutting board, or sturdy surface, cut in half, and take a bite, but also check out the cool layers you have just built.
