Pappardelle Pasta with Mushroom Sauce

Mushrooms are one of the most sophisticated ingredients you can use while cooking. The complex flavors and varied species make it one of the tastiest weapons you can have in your arsenal—as long as you know what you’re doing. This recipe will definitely become a staple in your cooking repertoire.

 

Ingredients

  • 12 oz of mixed yellow foot and shiitake mushrooms
  • 1 medium red onion or 3 small red shallots, chopped
  • 4 cloves minced garlic
  • 2 tbsp rosemary
  • 1 cup white wine
  • 2 cups chicken stock
  • 1/4 cup cream fraiche
  • 1/2 lbs pappardelle pasta
  • Pinch of Parmesan cheese

Directions

1. Boil pasta, as directed.

2. Chop stems off mushrooms and begin cooking them in pan over medium heat. Add chopped onions and minced garlic after 5 minutes. Add white wine and chicken stock. Add rosemary slowly while stirring. Let cook for 15 minutes, don’t rush it.

3. Add cream fraiche while stirring. Add in the cooked pasta. Add Parmesan over finished pasta to taste.
