Try this high-protein, omega-3 rich new take on salmon. It doesn't get any simpler than this. It's a good meal for you if you're alone with crackers and also great table food, especially if it’s date night. If you want to jazz it up even more, try adding your favorite herbs or spices such as: fresh ginger, green onions, cilantro, sesame seeds or dill.

PRZ Salmon Tartar

  • 1 lb fresh salmon (sushi grade, without skin)
  • 1 finely diced shallot
  • 1 teaspoon of capers, chopped fine
  • 1 teaspoon of lemon zest, chopped fine
  • 1 teaspoon of chili paste, Asian preferred
  • 1/4 cup olive oil
  • 1 tablespoon of parsley, chopped up
  • 1 teaspoon of salt and pepper
  • 1 cucumber, sliced

1. Cut skin off bottom of fish, or ask fish guy at store to de-skin the salmon. Check for bones and debone, if you have salmon pliers great. If not, pull them out with your fingers.

2. Once you've de-boned the fish, cut it into cubes and then chop into really fine cubes.

3. Take shallot, capers, lemon zest, chili paste, olive oil, and parsley and mix in with the salmon.

4. Cover and place in the refrigerator for an hour.

5. Slice a cucumber. Add a little bit of salt and pepper and dash of olive oil to cucumber.

6. Place salmon on bed of shredded cucumber and serve.
