How To Make Roasted Garlic

Roasted garlic is a great flavor enhancer and it's not as potent as uncooked garlic. If you're a garlic lover you can eat it as is (just spread it on some crusty bread), but you can also mash it up with a fork and use it in your cooking. This is my secret weapon for dips and sauces, especially if I'm blending. Just roast a whole bulb, peel it, and then throw it in the blender.

  •  Whole garlic bulb
  •  Salt and pepper
  •  2 tbsp olive oil

1.  Preheat oven to 400 degrees.

2. Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact.

3. Cut 1/4 inch off the top of the garlic head.

4. Sprinkle with 2 tablespoons of olive oil and salt and pepper to taste. Roast for 30 minutes.
