Grilled Rib Eye Steak with Pomelo, Avocado Salad and Lime

Serves 4

 

Ingredients

 

For the Steak

  • 1 clove garlic
  • 1 dried chili, chopped
  • 1-2 tbsp loosely ground Dijon mustard (just enough to coat the steaks)
  • Black pepper
  • 4 quality 10oz rib eye steaks

 

For the Salad

  • 2 avocados peeled and diced
  • 1 large pomelo (aka Asian grapefruit) peeled and segmented
  • 1 bunch fresh coriander washed and coarsely chopped
  • 1 bunch scallions chopped
  • 10 shallots finely sliced
  • Lime juice to taste
  • Fish sauce, Thai style if you can get it, to taste

 

Directions

1. Mix together the garlic, chili, mustard and pepper, spread the resulting paste over the steaks and leave to marinate in the fridge for 30 minutes.

 

2. Mix all the dressing ingredients, season with lime juice and fish sauce, and set aside.

 

3. Grill the steaks to medium-rare and leave to rest. Slice the steaks on the diagonal, and serve on warm plates with rock salt, lime wedges and the salad.
