This dish is an easy way to get your morning protein and veggies that’ll set you up for a great day. It also makes a hearty meal for lunch and dinner. Make with any ingredients you have on hand, no need to go buy extra veggies.



  • Spray olive oil
  • 3 tsp unsalted butter
  • 2 shallots, finely chopped
  • 1/2 lb Swiss chard
  • Sliced eggplant
  • ½ cup mushrooms
  • Pancetta
  • 1 Onions
  • Pepperoni
  • 1 garlic clove
  • 7 large eggs
  • ½ cup freshly shredded Gruyere Cheese
  • ½ cup freshly shredded Cheddar Cheese
  • 3 tbsp freshly grated Parmesan Cheese
  • 1 tomato





1. Preheat oven to 350 degrees. Coat a 9x12 baking dish with cooking spray.


2. In a large skillet, heat butter over medium heat. Sauté shallots, garlic, and pancetta and cook until soft, about 5 minutes. Add all veggies and pepperoni and cook 5-10 minutes.


3. In a large bowl, beat eggs with a whisk until frothy. Add cheese. Stir in veggies. Pour the mixtures into the pan and sprinkle with Parmesan. Bake until brown, about 20 minutes. Remove from oven and let it cool. Slice into squares.
