Filet and Spinach

Filet mignon is one of the most delicious, easiest, and tender steaks you can cook. When you hear the name “filet mignon” it’s very easy to get intimidated. Filet does not take very much time to cook, I usually like mine medium pink, and so I cook it for 5 minutes on each side. It just needs to be pan-fried in a skillet on direct heat.

 

Ingredients for Filet

  • 2 (6-oz.) beef tenderloin filets
  • 2 teaspoon freshly cracked pepper
  • 1 teaspoon kosher salt
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 stems of rosemary
  • 2 stems of thyme
  • 3 garlic cloves with skin

 

Directions for Filet

1. Preheat the skillet over medium-high heat until very hot. Don't add any liquid, and don't cover the skillet.

 

2. Once you're ready, add olive oil followed by rosemary, thyme and garlic.

3. Season the steak with salt and pepper on both sides, then place the steak in the skillet and let it cook for five minutes on one side, add butter and flip it for another 5 minutes. I like using tongs when I'm making my filet, it allows me to cook the steak on its sides and take advantage of the flavors in the pan by moving the steak around.

4. After you're done, put the meat in a bowl and then pour the butter and oil from the skillet over it.

 

Ingredients for Spinach

  • 3 to 4 bunches of spinach washed
  • 1 garlic clove sliced
  • 1 tablespoon of olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper

 

Directions for Spinach

1. When making your spinach, remember, it shrinks. That's why I've recommended 3 to 4 bunches or as my mom says “handfuls.” Make sure to wash the spinach (you can also buy pre-washed). When your skillet is ready, add half your oil, half of the garlic, and two handfuls of spinach.

 

2. When you see the spinach starting to change colors, add two more handfuls of spinach, the rest of the garlic and olive oil. Use a wooden cooking stick or your tongs and stir the spinach around the skillet. This usually takes 10 minutes.

 

3. Take your skillet off the heat, put the spinach on a serving dish, season with salt and pepper.

 

Finish: Take spinach and place it on a plate, then take a filet and place it on top of the spinach and chow down.
