Chicken Parmesan

Use panko for a light, crisp, and healthy alternative to Chicken Parmesan. This is a great meal for some much needed “manly protein.” If there’s no time to make the sauce, grab a jar of store-bought tomato sauce (we won’t judge). Enjoy!

 

Ingredients

  • 2 large boneless chicken breasts
  • 3 eggs
  • 1 cup flour
  • 1 cup panko bread crumbs
  • Salt
  • Pepper
  • 5 tomatoes
  • Olive oil
  • Balsamic vinegar
  • 2 Shallots
  • 2 handfuls of basil
  • 1 ball of fresh mozzarella

 

Directions

 

1. In a shallow bowl, mix together the panko, salt and pepper. In two separate shallow bowls, whisk together the eggs in one and place flour in other.

2. To bread the chicken, dunk a breast in the flour and shake off the excess. Next, coat it in the eggs and let the excess drip off. Next, press it into the panko mixture until it’s well coated. Set the breaded chicken aside and repeat with the remaining breasts.

3. Heat 1/4 cup of olive oil in a large sauté pan on medium-high heat. Sauté chicken in pan for 3 minutes on each side to brown.

4. Lay chicken on cookie sheet and put aside.

5. Sauté the sliced tomatoes in olive oil and shallots. Deglaze the pan with balsamic vinegar and toss in basil.

6. Layer tomato mixture over chicken and cover with sliced mozzarella.

7. Bake in the oven for 10-12 minutes at 400 degrees, or until the mozzarella begins to brown.

8. Serve garnished with basil.
