Basic Tomato Sauce

Serves for 1 Pizza or 4 Pasta Dishes

 

This is a simple sauce but it’s one of my favorites. I became a better cook when I started to understand sauces. Making a basic tomato sauce forces you to give your food love and to learn patience.

 

One of the easiest ways to impress a friend is to cook a great meal. Impress people by telling them the tomato sauce is homemade and not from a can. It's perfect for homemade pizza or for a simple bowl of pasta or great for those of you out there that want the belly bombing veal ptarmigan.

 

Ingredients

  • 7 fresh plum tomatoes from the market
  • 1 roasted onion
  • 2-3 garlic cloves
  • Olive oil (blended with canola oil)
  • 1 tsp salt and pepper
  • 1 tsp of oregano (optional)
     

PRZ Basic Tomato Sauce

 

Directions

1. If you have fresh tomatoes, blanche them in boiling water until the skins are loose and wrinkled. (Or put in pot with olive oil and let the tomatoes sweat in the pot.)
 
2. Cool the tomatoes in cold water and remove the skins. Be careful the tomatoes will be hot.
 
3. Put the tomatoes back into the pot with garlic and cook on medium temperature.
 
4. Cover with top and cook for an hour slowing decreasing the temperature over time.

 

PRZ TIP: Boil water and add penne. When pasta is cooked, drain and put back into pot. Pour PRZ Tomato Sauce over penne and add basil, Parmesan, salt and pepper.
